GUACAMOLE RECIPE

3 ripe avocados
1 tsp salt
1 tsp pepper
a few dashes of hot sauce
juice of one lemon
3 cloves garlic, crushed
red onion chopped
1 tomato, seeded/cored and chopped

 

Scoop out the fillings of the avocados and place in a bowl. Add the next 5 ingredients and stir. Fold in the onion and tomato. Enjoy!

TATOR TOT POTATO SKINS RECIPE

1 Bag Tater Tots
Shredded Cheddar Cheese
Sour Cream
Bacon Bits
Chopped Scallions

 

Heat oven to 425 degrees and bake the frozen Tater Tots for abut 25 minutes or until fairly crispy. Transfer into a baking dish and sprinkle a few handfuls of bacon bits and cheddar cheese over the top and return to the oven until melted, about 5 minutes. Take out of the oven and add a few dollops of sour cream and sprinkle some scallions on top. Serve immediately.
Serves 6

DEVILED EGGS RECIPE

7 Hard Boiled Eggs
2 Tbl. Mayo
2 Tsp. Mustard
1 Tsp. sweet relish
1 Tbl. Fresh dill or 1 tsp. dried
a few shakes of hot sauce
1 celery stalk, chopped in small pieces

 

(These measurements are approximate and should be adjusted for taste). Scoop out the yolks of the hard boiled eggs and place in a bowl. Set the whites aside. Add the next five ingredients and mix well until smooth. Then add in the chopped celery. Refill the egg whites with the filling, either by using spoons, a pastry bag or a Ziploc bag with the corner snipped out allowing for the filling to be squeezed into the eggs. Top with a light dusting of paprika and serve cold.

VEGETARIAN CHILI RECIPE

Can be made early in the day, either on the stove or in a Slow Cooker.

 

4 Cans Chili Beans in Sauce (do not drain)
1 Can Corn, drained
1 Can Red Kidney Beans, drained
2 Cans Pinto Beans, drained
1 Can Chopped tomatoes, partially drained
1 Package Taco or Chili seasonings
2 Tbl. Ketchup
1 Tbl. Brown Sugar
2 Tbl. Chili Powder

 

Mix all ingredients together and heat on low for a few hours on the stove or in your slow cooker. Serve with cheese, sour cream, salsa, chives and Corn Bread on the side!

BAKED CHICKEN WINGS RECIPE

2 1/2 pounds chicken wings
Frank’s Hot Sauce
1/2 cube melted butter

 

Mix a bottle of Frank’s Hot Sauce with melted butter. Set aside. Bake 2 1/2 pounds chicken wings in a 450 oven for 25 minutes. When the wings are done, drop them into the bowl of sauce until mixed together. Serve with a side of blue cheese dressing and celery sticks.

BANANA CREAM PIE RECIPE

2 Packages Pepperidge Farm Chessmen Cookies
4-6 Ripe Bananas
1 Package Vanilla Pudding
2 Cups Whole Milk
1 Carton Cool Whip
1 Can Sweetened Condensed Milk
1 8 oz. Package Cream Cheese

 

Blend the whole milk and pudding mix until thick. Set aside. In another bowl blend together the cream cheese and sweetened condensed milk. Combine the two bowls together. Fold in Cool Whip. To assemble: place one package of the cookies in rows on the bottom of a 9 x 13 casserole dish. Slice up the bananas and layer on top of the cookies. Spread all of the filling on a layer on top of the bananas. Then place the second package of cookies in rows on top of that (so the cookies create the bottom and top crusts). Chill in the refrigerator a few hours before serving.
